1 small white cauliflower, cut into florets 1 small green cauliflower, cut into florets juice of 1 lemon, strained
2 teaspoons finely grated lemon rind 6 tablespoons olive oil
1 red pepper preserved in brine, drained and finely chopped pinch of chilli powder
pinch of dried oregano 1 clove garlic, chopped • salt and pepper


1.Parboil the cauliflowers in separate pans of salted water for 5-8 minutes. Drain well and arrange in alternate coloured layers on a serving dish.
2.Mix together the lemon juice, lemon rind, olive oil, pepper, chilli powder, oregano and garlic in a bowl and season with salt and pepper to taste.
3.Pour the dressing over the cauliflower and leave in a cool place for 1hour to allow the flavours to mingle, then mix and serve.
