40 g butter
40 g plain flour
500 ml/18 fl oz Vegetable, Fish or Meat Stock
salt and pepper


1.Melt the butter in a saucepan over a low heat.
2.Sprinkle in the flour and stir until the mixture becomes golden brown and smooth.
3.Gradually stir in the stock, a little at a time. Bring to the boil and cook, stirring frequently, for about 15 minutes.
4.Season with salt and pepper to taste.
5.For lasagne or meatballs.
