200 ml/7 fl oz white wine vinegar
200 ml/7 fl oz olive oil
juice of 1 lemon, strained
2 teaspoons finely chopped fresh rosemary
1 tablespoon finely chopped
fresh flat-leaf parsley pinch of dried oregano
salt and pepper


1.Mix together the vinegar, olive oil and lemon juice in a large bowl.
2.Add the rosemary, parsley and oregano and season with salt and pepper.
3.Marinate fish for a couple of hours before cooking.
4.For fish.
