500 g/1 lb 2 oz whitebait
4 tablespoons olive oil
juice of 2 lemon, strained
salt and white pepper


1.Wash the fish carefully and thoroughly. Parboil for a few minutes in salted water.
2.Drain carefully and leave to cool. Mix together the olive oil and lemon juice in a bowl and season with salt and white pepper
3.Pour the dressing over the whitebait and toss. Leave to stand for 10 minutes before serving.
